  1. Sorry you’re dealing with a setback. The pizza sounds good but figures the kneading is what you didn’t want to do and the part you ended up doing. For a less formal dinner for your SIL, have you tried any of the One Pot Wonders? Usually a pasta of some sort with other stuff added. Those saved my butt on days I didn’t know what to cook for dinner. There’s scads of those all over the internet. There’s also a great dish called Chicken Meatloaf Cupcakes I’ve made. Individual meatloaves in a cupcake pan. Very quick & easy that you can jazz up with a nice presentation to make it look far more intricate than it really is. Take it easy and I hope you’re feeling back up to par soon.


    1. Thank you so much! I LOVE one-pot meals!!!! I fix them regularly at home and find they usually can be doubled. I freeze the extra to have a quick meal a few weeks down the road. I’ll have to try the chicken meatloaf cupcakes. I’ve made mini-meatloaves before, but I haven’t tried them in muffins. Now shepherd’s pie in muffins is AWESOME! 🙂

      I’m missing cooking. I hope to get back to it soon. I need the “therapy” of it and the creativity. Thanks so much for your support. I can’t believe how much encouragement I get from so many people. It’s truly amazing.
