This weekend I had to take it easy on the cooking. I’m still coming off of a really bad fibro flare up. I probably did more than I should have, but I also “needed” to cook. Sometimes I need to know I’m doing something good for my family even when I don’t feel like doing much.
My FIL posted on Facebook that he was having a rough day on Sunday. My husband thought maybe it would help if we took the girls over to visit and have dinner. We haven’t been over as a family in a couple of weeks, but husband and the girls visit every Tuesday for dinner. My FIL became a widow 7 months ago and is still learning to live “on his own” while caring for his adult daughter who has a TBI.
I really didn’t have a dinner plan. Husband asked if I could make homemade pizzas. We had about 1/2 the ingredients, and FIL had the rest. I told husband I could make dinner as long as I had help. I wasn’t sure how much I could do without relapsing, and I have been very leery about over-exerting myself.
Husband got out the ingredients to make pizza dough. Then he handed me the bowl to knead it. That was the part I was afraid to do. I muscled through it though. It probably could have been kneaded a bit more, but I physically couldn’t do it. While the dough was rising, I started making brownies.
We made 2 large pizzas. One pizza was ham and pineapple. The other pizza was pepperoni, mushroom and black olive. They turned out ok, and everyone seemed to like them. The brownies were a hit too. Word of warning: the brownies are VERY rich and sweet (and there is NOTHING wrong with that!). I’m still working with that recipe to be something I can tolerate and have lower calories. I doctored up some plain applesauce by adding some cinnamon, and then rounded out the meal with a salad.
Not a bad meal for not having a clue of what to fix.
I think I am far enough past my flare up to almost be back to normal. I have some residual pain that doesn’t seem to want to end, but it has become more of a nuisance than real concern. I’m not quite ready to resume everything I was doing before, but I’m working towards it.
Happy cooking! I need to plan some meals for the this weekend…. My SIL has a birthday coming up soon. Maybe I can throw together a slightly less formal meal for her.
