I’ve seen recipes of how to add canned pumpkin to pancake batter to make pumpkin pancakes. Mom had some leftover pumpkin pie mix that just did not fit into the pie shell at Thanksgiving. I told her I would find a use for the mix…
I used a pre-made baking mix that I received from the food pantry. I added the pumpkin pie filling to see how much liquid it created. I stirred until my arm about fell off. Then I started adding water. The baking mix directions stated to add milk or water to make pancakes; I usually choose water. I kept adding water until the batter was thin enough to poor/scoop out and into the pan.
The pancakes were cooked as usual, and then butter added while they were still warm.
I thought they turned out well. The kids ate the pancakes, and they seemed to get fuller faster than with the traditional pancakes. The kids used mixtures of maple syrup and honey on the pancakes. I thought they were flavored enough to not need any topping (although I did consider whipped cream). Definitely something to do again and may even be worth making pumpkin pie filling for this purpose.
