I’ve been sitting with a basket of ingredients to use. It was almost too long of a wait, especially since some of the items were clearances. I felt like I was on the Food Network show Chopped. Here’s some ingredients, figure out what to do with them. I’ve not been cooking from scratch much lately, and it’s really curbed my creativity. It’s also reduced my confidence in trying new things.
I had 2 boxes of veggies that were turned into “noodles”. I didn’t know what to do with them for several days. I finally had an idea.
I cooked some chicken in the pan and added some mushrooms to it, along with various seasonings. After that was cooked, I put the “noodles” in the pan to cook/saute, again with various seasonings that sounded good at the time. As that was nearing completion, I added the chicken and mushrooms back in. It made up quite a bit more than I expected and the water released from the veggies surprised me. I kept trying to get the water to cook down and dry out the veggies. I finally got it to cook through. I added some parmesan cheese to finish it off.
I liked how it turned out, and the girls ate it fairly well. Definitely something I would like to do again, but I want to change the cooking method. I’ve done some online recipe search that showed the “noodles” being baked instead of fried/ sauted. I’ll be watching the grocery clearance….
