I had some leftover rice I wanted to use up. I was tired of chicken and rice though and tried to come up with something different using some of the supplies I had on hand. Why not try my take on red beans and rice?
I had cooked the rice a few days ago. I had a can of dark red beans and light red beans. I found a skinless sausage link in the freezer…. I was set.
Betty Crocker let me down tonight. There was a sausage soup listed, but not in the style I was looking for. It was time to improvise and make my own one-pot meal.
I found some celery in the fridge and chopped it up. I threw it in the pan. As the celery started to cook, I added some dried, minced onion and some butter and seasonings. While it was cooking, I diced up the sausage links and added it to the pan.
After it was cooked, I removed it from the pan. I added the rice to the pan with some olive oil, butter, and more spices. After the rice was warmed, I added the sausage and celery mix back to the rice. I opened the cans of beans and a can of corn. It was all added to the pot with a little extra water, enough to rinse each can. The mixture cooked together for about 15 minutes.
Surprisingly, it turned out pretty good. The kids ate every last bit… so much for lunch leftovers. It was good to have something a bit different and to use up supplies that were on hand. I’m still trying to get back in the habit of cooking and cooking with the available supplies in the kitchen. I’m needing the therapy and stress relief that only comes from cooking.
