This morning, I really wanted breakfast. I haven’t been in much of a breakfast mood recently, until today.
I used to get Taco Bell’s bacon crunchwrap a lot. It’s one of the first things I think when I need to grab breakfast on the go. Although I was going to be out early this morning, I really wanted breakfast at home. I didn’t have time to cook before my appointment, but hitting the kitchen was the first thing I did as soon as I got home.
I had been thinking of this for a few days. I made a point of buying eggs and more tortillas at the store last night. It actually went together quicker and easier than I had anticipated.
I scrambled a couple of eggs. At the last minute, I added some bacon bits to the scramble. While the eggs were cooking, I diced some mushrooms and started warming the quesadilla maker.
I added the first tortilla, a slice of pepper jack cheese, the eggs (it’s a good thing I put the bacon bits in the scramble because I forgot to add them to the quesadilla), the mushrooms, another slice of cheese, then the top tortilla. I closed it up and let it warm through. Because I have fajita size shells, I had more eggs and mushrooms than I needed, but not enough for 2. It really made 1 1/2. My quesadilla maker doesn’t fully cut the food, but it does score it nicely. I finished cutting it and sat down to enjoy.
It was GREAT! It wasn’t like a crunchwrap, but that’s ok. I didn’t need it to be the same. I made it my own and enjoyed every bite. There are so many possible ideas of how to change it in the future based upon what I have on hand. I’m sure the kids will like it if I change the cheese used. It’s quick, easy, and completely customizable.
