It’s been a while since I’ve taken the time to write. Here’s a brief update….
I did start cooking more after having to officially end my employment at the end of October. I don’t have the kids in the evenings, usually, except weekends. So most of my cooking is still weekends, unless it’s for myself. I moved to a bigger home. I’ve been volunteering in Peanut’s classroom 1 afternoon/week (that’s all my body can handle!). I’ve recently started a part-time job, so I’ve been going through training for it. I’ve started back to school because I think I know what I want to be when I grow up.
There are so many things going on, that writing is one of the last things I think about. Oddly enough, I really miss writing. I’m trying to get better at scheduling some time to write. I have a few blogs that I write on, and this one has been neglected for a while. I’ve not forgotten about it though. I actually have several pictures on my phone to transfer over to the computer so I can write about other meals I’ve made Some good, some not so good. 🙂
For the past few nights, Beef and Noodles has really sounded good. It makes a fair amount, so I hated to make it just for me. I really need the kids home to help me eat it. I didn’t think I would get to make it tonight. We were advised that we’re on a boil water notice for the next couple of days. A friend informed me that as long as I boiled everything long enough, dinner would be fine. My ex has the flu, so the girls were home. I did a little happy dance!
Burst my bubble, the girls wanted nothing to do with Beef and Noodles. Lil Bit wanted tomato soup and grilled cheese. Peanut wanted canned chicken noodle soup and grilled ham and cheese. For once, I catered to them. They each got canned soup, but I made my Beef and Noodles.
I did a very basic, cheater, version. I had a can of beef in juice from the food pantry. I put that in the pan with a can of beef broth and some extra water. I boiled it for a good long while. I finally remembered to season it. I threw in some minced garlic, dried onion, no-salt seasoning, sriracha powder, curry, cumin, and celery flakes (basically anything that sounded good in the spice cabinet). I then boiled it for a good long while, again. I added some egg noodles (I wish I had been home earlier today to make homemade noodles!), then finally thickened it with cornstarch. Add a side of instant potatoes, and viola: Beef and Noodles!
My heart is happy. I have good leftovers for lunch tomorrow and dinner, if I can convince the girls to eat it.
